You will need:
115 g butter, softened to room temperature and add some extra for the tin.
125 g hazelnuts
125 g sugar
4 large eggs
Zest of 1 orange
30 g plain flour
2 tablespoons poppy seeds
1 pinch salt
3 heaped tablespoons apricot jam
50 g cooking chocolate (70% cocoa solids)
How to prepare it:
You must preheat the oven to 190 C or 375 F. You will need a 11 inch loose-bottomed flan tin or cheesecake form. Put on in the bottom a grease-proof paper and put the tin in the fridge. Now you have to bake the hazelnuts in the oven for about 5 minutes. They should get lightly golden. Let them cool down and mill them into the mixer until you get fine, soft powder. Use the mixer again to beat the butter and the sugar together. Now add the egg yolks one by one and the orange zest too. Sieve in the flour and mix it with the powder of the hazelnut and the poppy seeds. Take another bowl and beat the egg whites with a pinch of salt until they are really stiff, pour them slightly into the hazelnut mixture. Mix all the ingredients together into the cake tin and bake it in the preheated oven for around 25-30 minutes until the cake gets a little color on the top. You can easily check if it’s done with a cocktail stick. Poke the cake with the stick in the center of the cake and if it comes out clean and not sticky the cake is ready.
Remove from the oven and allow it to cool down. While you wait boil the jam with 4 tablespoons of water. By using a cooking brush apply the jam above the cake and let it cool down again. You can grate the chocolate while the cake is cooling. Sprinkle it over and serve in a white, clean plate. You can decorate the way you like and enjoy your dessert.
